This dish is a perfect combination for satisfying the need for energy, focus, and your sweet tooth. It’s a sensory delight of states and textures and is easy to make. This beet soup recipe is inspired by a classic European-style borscht soup. Made with red beets, onion, and garlic, this simple soup creates a flavor-packed meal that is equal parts beautiful looking and delicious tasting.
Beets are the centerpiece of this dish. Rich in folate (vitamin B9) and beets are highly nutritious and packed with essential vitamins, minerals.
Ingredients
2 medium-size roasted beets, skin on
2 carrots
1 small onion
1/2 cup of greek yogurt
6-8 ounces of water
Fresh or dried dill
Salt lightly to taste
Directions
- Rub olive oil generously over the beets, carrots, and onion.
- Place in a pyrex baking dish in the oven for 90 minutes at 350 degrees.
- Don’t peel. Just take off the outer skin of the onion.
- Let cool before blending.
- Cut into chunk-size pieces, place everything in the blender with the yogurt, and mix according to taste, chunky or smooth.
- Top with fresh dill and chill until your meal.
